Key West Restaurants Use Summer Slow Season To Showcase New Selections

While many businesses dread a slowing down, restaurants in Key West, Florida use the opportunity to create new menu items for the upcoming tourist season.

Nobody likes to see the customers go home for the summer. There may be some sense of relief as people get a chance to slow down and take the time to enjoy their island paradise, but they also know that it is only a few short months before those people start coming back to escape the cold and snow that dominated last year’s winter. Many chefs, including Chef Brendan Orr of the Roof Top Cafe, look forward to that slow time because it gives him the opportunity to work on creating new dishes to add to his constantly evolving menu of island cuisine.

"Every year I like to make sure I have a few new items that become staples of the menu, as well as have a wide selection of specials to choose from." Chef Orr recently spoke while spending the afternoon preparing fish caught that morning which would be served that evening. "To do that, I need to have the time to work on the dishes, as well as get the feedback I am looking for. It becomes a win-win situation. Our customers get to try something before anyone else can, and I get to constantly upgrade our dinner selections."

With the summer time being slow, it gives Chef Orr and his counterparts at the other various Key West Restaurants the opportunity to take the time they ordinarily wouldn’t have. "When we are putting out a dinner for 200 people celebrating one of our island weddings, that isn’t the time to be experimenting with something new. My staff takes the time now to perfect everything so that our busy season runs as smoothly as possible."

While they compete every year in such events as A Taste of Key West and the Master Chef, Chef Orr and his friends encourage people to take a summertime "food crawl". Stopping at several of the restaurants that help to make Key West, Florida famous, people can order one dish at a time to experience all of the new and exciting dishes that are being created. "People who return every year during the summer mention that as one of the reasons. They like the smaller crowds and lower prices, but they love all of the new food choices."
